Gin Paloma
Wolfrest’s take on the celebrated cocktail: fresh, citrus-led and pleasantly bitter.
The Paloma meets Wolfrest Italiano.
In our version of the Paloma, Wolfrest Gin Italiano replaces tequila and meets pink grapefruit. The result is a fresh, approachable cocktail with a clearly defined botanical character.
The gin’s Mediterranean notes, the rounded character of Piedmont hazelnut and the gentle bitterness of grapefruit create a lively balance, perfect for aperitivo.

Fresh, citrus-led and pleasantly bitter.
Pink grapefruit brings acidity, fragrance and a gentle bitter note. Its character complements juniper, wild rosemary, thyme, bay leaf, elderflower, orange and hazelnut without concealing the identity of Wolfrest Italiano.
Use well-chilled grapefruit juice and a neutral soda water to keep the cocktail clean, bright and easy to drink.
A slice of pink grapefruit.
A simple garnish immediately recalls the key ingredient and completes the drink without weighing it down. Place it on the rim or between the ice and the glass.

How to make a Gin Paloma
Can you make a Paloma with gin?
Yes. The traditional recipe uses tequila, while this interpretation features Wolfrest Gin Italiano for a more botanical, Mediterranean profile.
Which grapefruit should I choose?
Pink grapefruit is ideal for its balance of sweetness, acidity and bitterness, as well as the delicate colour it gives the cocktail.
Which glass should I use?
A highball filled with ice keeps the Paloma chilled and enhances the lively sparkle of the soda water.
How can I make the Paloma less sweet?
Reduce or omit the agave syrup and use a neutral soda water, adjusting the balance to the sweetness of the grapefruit.
